High Calorie, High Protein Diet Guidelines for Kids - Recipes

Potato Cheese Soup

  • 1 can (11 ounces) cheese soup
  • 1 1/2 cups mashed potatoes
  • 1/2 cup double strength milk*
  • 1/4 cup nonfat dry milk powder

Blend all ingredients together and heat until boiling.

*Double strength milk: mix 1 cup whole milk with 1/4 cup nonfat dry milk powder. Mix well.

Meat Loaf

  • 1 1/2 lbs. ground beef
  • 1/2 cup nonfat dry powdered milk
  • 1 Tbs. wheat germ
  • 1 can condensed cream of mushroom soup
  • 1 cup bread crumbs
  • 1/4 cup chopped onion
  • 2 eggs, slightly beaten
  • 1/2 tsp. salt
  • dash of pepper
  • 1/4 cup whole milk

Preheat oven to 350 degrees. Mix beef, milk powder, 1/2 of the soup, bread crumbs, onion, eggs, salt and pepper thoroughly. Shape into a loaf and place in a shallow baking pan. Bake for 1 hour and 15 minutes. While baking, combine the rest of the soup and milk together and heat through (either on the stove top or in the microwave), and serve over the meatloaf as a sauce. Makes 6 servings.

Peanut Butter and Jelly Squares

  • 1/3 cup honey
  • 3/4 cup peanut butter
  • 4 cups bite-size shredded wheat cereal (roll into crumbs)
  • 1/4 cup grape jelly, melted

In a small saucepan, heat honey just to a boil; add the peanut butter and stir well until blended and heated through. In a large bowl, pour the honey mixture over the cereal, tossing to coat well. Press the mixture into a greased 8x9x2 inch pan; spread the melted jelly over the top. Chill at least 1 hour, then cut into squares.

Fruit Crisp

  • 4 cups sliced, fresh or canned fruit
  • 30 Ritz crackers, crushed
  • 1/3 cup firmly packed brown sugar
  • 2 Tbs. flour
  • 2 Tbs. margarine or butter, melted
  • 1/2 tsp. cinnamon

Place fruit in a greased, 8x8x2 inch square pan; set aside. In a medium bowl, combine the cracker crumbs, brown sugar, flour, margarine, and cinnamon. Sprinkle evenly over the fruit. Bake at 375 degrees for 30 minutes, until lightly browned. Serve warm with ice cream, yogurt, or whipped cream. Makes 6 servings.

Macaroni and Cheese

  • 3 cups hot cooked macaroni, drained
  • 1/4 cup margarine or butter (1/2 stick)
  • 1 Tbs. flour
  • 2 egg yolks, slightly beaten
  • 1 cup grated cheese
  • 1/4 cup evaporated milk plus 3/4 cup whole milk
  • 1/4 tsp salt
  • Pepper to taste
  • 6 crackers, crumbled

Melt margarine in a large pan; stir in the flour, egg yolks, salt and pepper. Add milk and heat slowly, stirring often, until the sauce is thickened. Add the grated cheese. Mix sauce with cooked macaroni, and placed in a greased baking dish. Top with additional grated cheese and cracker crumbs. Dot with 4 tsp margarine. Bake at 400 degrees until bubbly. Makes about 6 servings.
